Gadabouts High Country Crab Cake

Ingredients
2 beaten eggs
1 pound special or lump crabmeat
1.5 cups Japanese bread crumbs
1 tablespoon Old Bay Seasoning
1/8 teaspoon roasted garlic seasoning
1 tablespoon chopped fresh parsley
1 heaping tablespoon of Dijon mustard with grain
3/4 teaspoon fresh squeezed lemon juice
3 tablespoons Hellman's Mayonnaise
1/2 teaspoon dry mustard
3 tablespoons Lea & Perrins Worcheshire Sauce

Procedure
Mix all liquid ingredients and spices.
Pour over bread crumbs and blend well.
Add crabmeat and mix well.
Refrigerate for 30 minutes.
Shape into crabcake patties.

Preheat vegetable oil in a non-stick skillet medium to medium high.
Brown crabcakes on each side until golden brown (internal temperature of 160 degrees F)


Southern Fried Green Tomatoes

Ingredients
1 green tomato sliced (1/8 inch)
1 egg mixed with 1 tablespooon of Half & Half dairy product
1/3 cup all purpose flour
2/3 cup yellow cornmeal
salt & pepper

Procedure
Heat oil in a non-stick skillet medium to medium high.
Dip tomato slices in egg mixture.
Dredge tomato slices in flour-cornmeal mixture.
Cook tomato slices in skillet on both sides until golden brown.

Spiced Remoulade Sauce

Ingredients
2 tablespoons Hellman's Mayonnaise
2 teaspoons Dijon mustard with grain
1/2 teaspoon tarragon
1/2 teaspoon caribbean jerk seasoning
3 kosher dill pickles diced
1/8 teaspoon salt
1/8 teaspoon white pepper
1 teaspoon capers

Procedure
Mix all ingredients together.
Enjoy with crabcakes and other seafoods.
