Casserole Dish Grain Bed for Seafood Medley

4 cups quinoa
8 cups water
4 tablespoons unsalted butter
1 tablespoon paprika

Procedure
Bring the 8 cups of water to a boil in a saucepan.
Add the 4 cups of quinoa.
Simmer for 25 minutes or until most of the water has been absorbed by the quinoa.
Add the butter and paprika, cover and keep warm.

Seafood Medley

Put all ingredients into a Reynold's Aluminum Hot Bag.
This bag can be put into the oven or onto a charcoal or gas grill grate.

22 Mussels
12 Shrimp shelled & deveined
Halibut filet cut into bite sized pieces

1 Leek
Cut the green stalk from the lower greenish-white bulb; prepare the bulb by cutting off the root end piece; split it down the middle; remove center yellow leaves; roll each half and cut into strips.

3 large Roma tomatoes diced
1 bunch of scallions (green onions) tops chopped
2 Jalapeno peppers sliced into circles
Juice of 1 large lemon
1 bunch of flat leaf parsley chopped
1 cup of white wine

Procedure
Roll the hot bag end up twice and place onto a sheet tray.
Bake in a preheated oven 450 degrees for 25 minutes.

Serve
Put the quinoa mixture into a casserole dish and top with the seafood medley.

Robert's Most Yum Stuffed Squash or Zuchinni Boats

Green zuchinni & yellow zuchinni or yellow squash
1 poblano pepper
1 red bell pepper
1 cup diced onions
1/4 cup crystalized ginger
extra virgin olive oil

Procedure
Cut the squash in half longways.
Using a spoon, remove the core of each squash and place it into a mixing bowl.
Dice the poblano pepper and add it to the mixing bowl.
Dice the red bell pepper and add it to the mixing bowl.
Dice the onion and add it to the mixing bowl.
Dice the crystalized ginger and add it to the mixing bowl.

Brush extra virgin olive oil on each squash half.
Stuff each squash half with the mixture,
Using a spoon, press the mixture into each squash half.

On a parchment paper-lined sheet tray (baking pan), bake the squash halves in a pre-heated 350 degrees oven for 25 minutes or until the squash are tender.
