Robert's Most Yum Pesto served over Angel Hair Pasta

Ingredients

Serves 3

1 cup packed fresh basil leaves
1 cup slightly toasted pine nuts
1 tablespoon fresh garlic minced
2 teaspoons extra virgin olive oil (evoo)
Coarse Kosher salt to taste

3/4 cup parmigiana cheese

Angel Hair Pasta


Procedure

In a glass mixing bowl, combine the basil leaves, pine nuts, minced garlic and evoo.
Use a wooden spoon and crush the ingredients (mortar and pestle method).
When the desired consistency is achieved, add salt to taste.

Cook the pasta and drain.

Serve 1/3 of the pesto over 2/3 cup of the pasta and top with 1/4 cup of the parmigiana cheese.
