Robert's Most Yum Stir Fry with Shallots, Shiitake Mushrooms, Poblano Pepper, and Veggie "Steak Strips".

Ingredients
1 cup diced poblano pepper
2 large shallots minced
3 large shiitake mushroom caps julienned
2 tablespoons of extra virgin olive oil
1 cup of veggie "steak strips" (ingredients include wheat gluten and soy protein)
1/4 cup of water
Kosher salt and black pepper to taste

1 cup cooked rice or pasta

Procedure
Remove stem, core, and remove seeds from poblano pepper.
Cut the pepper into quarters, remove whitish-green membrane.
Julienne quarters and then cut the thin strips into small diced pieces.
Dice the shallots and mince.
Julienne the shiitake caps.
Saute the shallots and diced poblano in 2 tablespoons of extra virgin olive oil.
Add the veggie "steak strips" and 1/4 cup of water and simmer for 2 minutes.
Add the shiitakes and simmer for 1 minute.
Season with salt and pepper

Serve over rice or pasta.
