Robert's Most Yum Salsa, Guacamole, and Burritos


Salsa

Ingredients
6 cups blanched and peeled roma tomatoes diced (approximately 12 large romas)
3 tablespoons extra virgin olive oil
1.5 cups diced sweet onions
1 cup jalapeno peppers diced
1 cup green bell pepper diced
0.5 teaspoon habanero pepper minced
4 cloves of garlic minced
3 tablespoons sugar
1 tablespoon dry oregano
2 tablespoons fresh basil chopped
6 tablespoons distilled white vinegar
0.5 teaspoon salt
0.5 teaspoon fresh ground black pepper

Procedure
Bring a pot of water (4 quarts) to boil.
Use a knife to score the roma tomatoes (cut an X into them).
Put the tomatoes into the boiling water and blanch them for 10 minutes.
Using a colander, remove the tomatoes from the boiling water.
Cover them with ice to stop the cooking process.
After cooling, remove the tomato peel from each tomato.
Saute the onions and peppers in the olive oil until the onions are translucent.
Add the minced garlic and saute for two minutes.
Add the tomatoes and remaining ingredients.
Simmer for 30 minutes.


Guacamole

Ingredients
2 avocados
1/4 cup sweet onion diced
3 large garlic cloves minced
Juice of 1 lime
pinch of salt

Procedure
Cut the avocados lengthwise, twist the two halves apart, and remove the seed.
Using a large spoon, scoop the avocado "flesh" from the rind and place it into a mixing bowl.
Add the remaining ingredients and mash with a potato masher until creamy.


Burritos

Ingredients
2 packages of Boca Burger Meatless Ground Burger (3 packages in a box)
2 tablespoons of corn oil
1 cup sweet onion diced
2 large cloves garlic minced
1 tablespoon cumin
2 tablespoons low salt tomato paste
1 poblano pepper diced
salt and pepper to taste

Procedure

Saute the onion and poblano pepper in the corn oil until onions are translucent.
Add the minced garlic and saute for two minutes.
Mix in the tomato paste and cumin.
Mix in the Bocca Burger Ground Burger.
Add salt and pepper to taste.
