Robert's Most Yum Black Bean Burgers
Ingredients 1 pound bag of dry black beans (sort for rocks, rinse, and soak in water overnight) Cook the black beans until tender (approximately 3 hours).
4 cups cooked black beans 1 tablespoon cumin 1 tablespoon marjoram 1/2 cup extra virgin olive oil 1 bunch chopped cilantro 1 orange bell pepper diced 2 cups of Lowe's Food Toasted Oats cereal salt & pepper to taste
Procedure Sautee the diced orange bell pepper in 1 tablespoon extra virgin olive oil until tender. Combine all ingredients in a mixing bowl. Form black bean burgers and place each on a parchment paper-lined sheet tray. Bake in a 350 degree oven for 10 minutes. Cover burgers with with cheese, if desired, and bake 2 minutes more.
Spaghetti Squash
Wash squash and place on a parchment paper-lined sheet tray. Poke steam vent holes in the top with a fork. Bake in a 350 degree oven for approximately 40 minutes (when the outside has browned slightly). Cooking time will vary with the size of the squash.
Cut the squash in half lengthwise. Remove the seeds with a spoon. Using a fork, place the squash onto a plate. Cover with chipotle sauce.
Chipotle Sauce
Ingredients 2 chipotle peppers (smoked jalapenos) diced 1 tablespoon distilled white vinegar 1 tablespoon sugar 1 cup sweet onions diced 2 cloves minced garlic 1 red bell pepper diced 1 Granny Smith apple diced 1 tablespoon extra virgin olive oil
Procedure Sautee the red bell pepper in 1 tablespoon of extra virgin olive oil until tender. To the sautee pan, add the chipotle peppers, apples, onion, and garlic and sautee for 5 minutes. To the sautee pan, add the vinegar and sugar. Combine all ingredients in a food processor and puree.
